This is my kids’ favourite way to eat pumpkin and honestly, I completely understand why.
It’s something my mom used to make for us when we were growing up, and it always felt like a treat. We’d eat one… then go back for seconds… and somehow there were always a few of us going back for thirds too! ![]()
Now I get to make them for my own kids, and watching them enjoy them brings back those same memories.
These Pampoenkoekies are soft, lightly sweet and coated in cinnamon sugar while they’re still warm. And although you can absolutely make them with leftover cooked pumpkin, I LOVE making them with roasted pumpkin. The roasting brings out that natural sweetness and gives them an extra depth of flavour.
And if you want to make life a little easier, there’s absolutely no shame in using ready-cooked pumpkin from the shop. Sometimes making family favourites means taking the shortcuts that make sense. ![]()
